Are you also constantly on the lookout for quick recipes? Well I am and today I want to give you a recipe for a dish that is really made in about 20 minutes, namely Salmon with Mango-Avocado-Salsa. No matter if you want to eat it for lunch or serve it as a light dinner, I can assure you that it won’t take you long to prepare it. The fruity salsa is perfect for the warm season. It is healthy, fresh and most delicious all at the same time. Serve it together with pan-fried salmon filets and crispy white bread and everyone will adore your cooking skills. All you have to do now is open a bottle of chilled white wine …

Salmon with Mango-Avocado-Salsa

Serves 4:
For the Salsa:
1 mango
2 avocados
3 spring onions
1 tomato (deseeded)
½ lemon (juice)
olive oil
1 tablespoon white wine vinegar
salt

For the salmon:
4 salmon filets (each about 150-200g)
salt
pepper
some lemon juice
olive oil

fresh white bread

 

For the salsa, peel the mango and the avocados, halve them, remove the stones and cut them into small chunks (½ inch). Deseed the tomato and cut it into small pieces. Chop the spring onions. Put the vegetables and the mango into a bowl. Add the juice of half a lemon, some olive oil, the white wine vinegar and some salt. Use a wooden spoon to mix everything carefully.

Season the salmon filets with salt and pepper and sprinkle them with some lemon juice. Heat some olive oil in a pan and fry the filets on both sides. They should be well done, the flesh flake easily but still be juicy. Serve them with the salsa and some white bread.

The salmon with mango-avocado-salsa is a really light, healthy and super quick dish. Serve it for lunch or for dinner. Everyone will love it.
