Who says that muesli only comes from a package, bought in the supermarket? Why should we put up with what muesli producers offer, when we can make our own granola and create a range of different sorts and flavors?

In this blog post you will find a basic granola recipe consisting of rolled oats, honey, sunflower seeds, pine nuts and coconut flakes. This mixture is baked in the oven for about 20 minutes. After cooling you have the typical crunchy granola texture. Now you can add other ingredients like dried fruits (e.g. cranberries, sultanas, chopped apricots, apples, etc.) or coarsely grated dark or white chocolate. And that’s it, your own granola.  Now, doesn’t that sound tempting?

Of course, you can also adapt the basic recipe like substituting the pine nuts with chopped almonds or other nuts. Consider this recipe as a basic recipe which can be adapted according to your taste and likings.

Granola with peaches and yoghurt

for the granola:
2 and ¼ cups (200 g) rolled oats
1/3 cup (50 g) sunflower seeds
¼ cup (25 g) coconut flakes
1/3 cup (25 g) pine nuts
½ cup (150 g) honey
⅓ cup (50 g) chopped or small dried fruits (optional)

for the yoghurt:
2 cups (400 g) Greek yoghurt
1/3 lb (150 g) curd cheese or cream cheese
3 tablespoons honey
a dash of lemon juice
some vanilla extract

for the fruits:
1/3 lb (150 g) melon (deseeded)
1/3 lb (150 g) peaches (stoned)
a dash of lemon juice
1 teaspoon honey
some finely chopped rosemary leaves (optional)

Preheat the oven to 320°F (160°C fan, gas mark 3).

For the granola combine all the ingredients carefully and thoroughly. Line a baking tray with parchment paper and spread the granola on it. Bake in the preheated oven for about 15-20 minutes, until the granola has turned a golden brown. Allow to cool completely then break the granola into small chunks/pieces, using your fingers. Store the granola in an airtight box.

For the yoghurt, mix all the ingredients very well.

Cut the fruits into small pieces and add the lemon juice, honey and maybe some finely chopped rosemary leaves. Stir to combine.

Serve the yoghurt with the fruits and the granola.

Note: After baking the granola you can add some dried fruits or coarsely grated chocolate, if you wish.
