Deseed the tomato and cut it into small pieces. Chop the spring onions. Put the vegetables and the mango into a bowl. Add the juice of half a lemon, some olive oil, the white wine vinegar and some salt. Use a wooden spoon to mix everything carefully.<\/p>\n<p>Season the salmon filets with salt and pepper and sprinkle them with some lemon juice. Heat some olive oil in a pan and fry the filets on both sides. They should be well done, the flesh flake easily but still be juicy.
