Beetroots are easily available now, even pre-cooked and peeled. I have already stated elsewhere in this blog that my granny had a really huge vegetable garden. And of course, she also grew beetroots. She mainly used them to make salad, with freshly grated horseradish and a delicious dressing. She always made a huge amount of this salad, filling it into jars, sealing them and thus preserving them. In the winter we just had to go into the pantry, grab a jar of her beetroot salad and enjoy it. It would have been way too elaborate and not traditional enough. She probably wouldn\u2019t have been able to pronounce the word <em>Cr\u00e8me Br\u00fbl\u00e9e<\/em> anyway. Her only comment would probably have been, \u201cAnother one of these new dishes\u201d, meaning that she would never try this recipe. Yes, that was her, my dear Granny. \ud83d\ude09 But on the other hand, I have to admit that in those days, when I was a teenager or in my early twenties and when I was looking over her shoulder and learning the basics of cooking from her, I didn\u2019t know myself what a cr\u00e8me br\u00fbl\u00e9e was and how wonderful it tasted.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-2290\" src=\"http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2017\/02\/red-beet-carpaccio7.png\" alt=\"photo beetroot carpaccio\" width=\"450\" height=\"680\" srcset=\"http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2017\/02\/red-beet-carpaccio7.png 450w, http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2017\/02\/red-beet-carpaccio7-199x300.png 199w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<p>With this recipe of a horseradish cr\u00e8me br\u00fbl\u00e9e I somewhat deviated from the original sweet dish and flavored it with freshly grated horseradish in order to turn it into a side dish for my beetroot carpaccio. I think that the combination is a good one and I\u2019m looking forward to your opinion!<\/p>\n<p>If you don\u2019t have a gas torch at home, you can also use the broiling function of your oven instead. When the grill is really hot just put the ramekins under it and broil for about 2 minutes (depending on the actual heat). Make sure that you keep a constant eye on them as you don\u2019t want to burn your cr\u00e8me br\u00fbl\u00e9e.<\/p>\n<p><!--more--><\/p>\n<p><img loading=\"lazy\" class=\"aligncenter size-full wp-image-2288\" src=\"http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2017\/02\/red-beet-carpaccio5.png\" alt=\"photo beetroot carpaccio\" width=\"450\" height=\"680\" srcset=\"http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2017\/02\/red-beet-carpaccio5.png 450w, http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2017\/02\/red-beet-carpaccio5-199x300.png 199w\" sizes=\"(max-width: 450px) 100vw, 450px\" \/><\/p>\n<h2 style=\"text-align: center;\">Beetroot Carpaccio and Horseradish Cr\u00e8me Br\u00fbl\u00e9e<\/h2>\n<p style=\"text-align: center;\"><strong>Serves 4<\/strong><br \/>\n<strong>For the Horseradish Cr\u00e8me Br\u00fbl\u00e9e:<\/strong><br \/>\n4 ovenproof cr\u00e8me br\u00fbl\u00e9e dishes (ramekins \u00e0 100 ml)<br \/>\n240 ml (1 cup) cream<br \/>\n160 ml (2\/3 cup) milk<br \/>\n1 piece of horseradish about the size of an adult thumb, peeled and coarsely grated<br \/>\nsalt<br \/>\n1 \u00bd teaspoons sugar<br \/>\nnutmeg, finely grated<br \/>\n2 teaspoons horseradish, finely grated<br \/>\n4 egg yolks<br \/>\nabout 4 teaspoons caster sugar<\/p>\n<p style=\"text-align: center;\"><strong>For the Beetroot Carpaccio:<\/strong><br \/>\n250 g (slightly more than \u00bd lb) beetroot, pre-cooked and peeled<br \/>\n8 tablespoons salad oil<br \/>\n1 handful of dried wild mushrooms<br \/>\nsea salt<br \/>\nsome old, thick balsamic vinegar<br \/>\n8 slices of prosciutto (leave out for a vegetarian dish)<br \/>\nsome lamb\u2019s lettuce or arugula for garnishing<br \/>\nsome freshly grated horseradish for garnishing<\/p>\n<p style=\"text-align: center;\">For the Horseradish Cr\u00e8me Br\u00fbl\u00e9e bring the milk, cream and the coarsely grated horseradish to the boil and remove from the heat immediately. (Be careful not to boil over!) Cover the saucepan and allow to cool completely, at least for 2 hours, best overnight. This allows the milk and the cream to get flavored by the horseradish.<\/p>\n<p style=\"text-align: center;\">For the mushroom oil soak the dried mushrooms in boiling water. Drain them when they are soft and squeeze hard to get all the water out of them. Chop finely and add to the salad oil. Allow to get infused for some hours or overnight.<\/p>\n<p style=\"text-align: center;\">Preheat the oven to 140\u00b0C \/280\u00b0F.<\/p>\n<p style=\"text-align: center;\">Strain the milk-cream mixture into another saucepan and discard the horseradish. In a separate bowl whisk the egg yolks with some tablespoons of the milk-cream mixture before combining it with the rest of the mixture. Add the salt, sugar and the grated nutmeg for seasoning and also add the finely grated horseradish. Heat over medium to low, stirring constantly. Don\u2019t bring to the boil! When the mixture starts to get a creamy texture pour into the cr\u00e8me br\u00fbl\u00e9e dishes (ramekins). Put the little dishes into a larger ovenproof dish and pour some boiling water into the larger dish, just enough so that the cr\u00e8me br\u00fbl\u00e9e dishes are up to about 2\/3 in the water. Bake in the preheated oven for about 50-60 minutes. Remove from the water and allow to cool completely, then chill in the fridge for some hours or overnight.<\/p>\n<p style=\"text-align: center;\">For serving cut very thin slices of the beetroot (with an electric bread cutter or a very sharp knife) and arrange on four plates. Season with sea salt and sprinkle with mushroom oil and some balsamic vinegar. Roll up the slices of prosciutto and arrange on the plates. Garnish with lamb\u2019s lettuce or arugula and freshly grated horseradish.<\/p>\n<p style=\"text-align: center;\">Take the cr\u00e8me br\u00fbl\u00e9es out of the fridge and sprinkle with caster sugar. In order to get the caramel layer on top of the cr\u00e8me br\u00fbl\u00e9e you can either melt the sugar by preheating the oven to broil and putting the dishes under it (for about 2 minutes, watch carefully so as not to burn!) or by using a torch*. They should only be used in well-ventilated areas. When lighting a propane gas torch, place the torch on a flat, steady surface, facing away from you. Light the match or lighter and then open the gas valve. Light the gas jet, and blow out the match. Always turn off the burner valve when finished using the torch.
