I hadn\u2019t seen her for quite some time. She knew about my food blog and she told me that she wanted to start her own blog. Shortly after this email I met up with her and we had a long, lovely and interesting conversation about blogging (among other things, of course). In her blog she is going to write about healthy food, fitness and happy moments in our daily life. I\u2019m still really thrilled about this conversation and I can\u2019t wait for her blog to go online. And then I thought, if healthy then also speedy. Because these are the kind of recipes that so many people are interested in. Including me, as a matter of fact. Of course you can also use only one sort (e.g. only basil or arugula or \u2026) Just take whatever you have at hand or feel like eating or whatever your herb garden offers. As long as the stems are soft and green you can use them as well.<\/p>\n<p>&nbsp;<\/p>\n<p><a href=\"http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2016\/05\/spaghetti-avocado-pesto3_blog.png\"><img loading=\"lazy\" class=\"aligncenter size-full wp-image-1898\" src=\"http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2016\/05\/spaghetti-avocado-pesto3_blog.png\" alt=\"photo spaghetti with avocado-cashew pesto\" width=\"435\" height=\"650\" srcset=\"http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2016\/05\/spaghetti-avocado-pesto3_blog.png 435w, http:\/\/www.myblueberrybasket.com\/en\/wp-content\/uploads\/2016\/05\/spaghetti-avocado-pesto3_blog-201x300.png 201w\" sizes=\"(max-width: 435px) 100vw, 435px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>For my \u201cmini\u201d-sauce I used some white wine as I love the combination of spaghetti and wine. But you can easily substitute it with 1 cup of spaghetti cooking water, stock or grape or apple juice.<\/p>\n<p>And the halloumi, I think it\u2019s like the <em>icing on the cake<\/em> in this pasta dish. Cut the avocados in halves, remove the stone and scoop the green flesh of the fruits out of the peel. Put into the food processor. Also add the cashews, garlic, lemon juice, olive oil, salt and pepper and process until you get a smooth pesto.<\/p>\n<p>Cut the halloumi into \u00bc inch slices and grill on both sides without any oil in a non-stick pan until golden brown.\u00a0 Transfer onto a plate and cover with kitchen foil to keep warm. Melt the butter in the pan, add the wine and allow to reduce by half. Add the drained spaghetti and the pesto and combine well.
